SaladStop! Unveils “Lulu,” a Generative AI Assistant to Revolutionize Customer Experience and Drive New Revenue

SaladStop!, the popular healthy eating chain, is set to revolutionize its customer experience and unlock new revenue streams with the introduction of “Lulu,” a generative artificial intelligence (genAI) assistant. Slated for its debut in Singapore in November 2025, Lulu is designed to help customers personalize and order meals through an intuitive chat interface, marking a significant step in the food and beverage industry’s adoption of AI technology.

Lulu will be integrated into SaladStop!’s mobile application, functioning as a chatbot capable of processing diverse meal preferences. Customers can specify calorie targets, flavor profiles, and dietary needs, and Lulu will generate custom bowl recommendations in mere seconds. This advanced capability is powered by an extensive database comprising eight years of customer order history and ingredient combinations from SaladStop!’s 80 restaurants worldwide.

Adrien Desbaillets, CEO and co-founder of SaladStop! Group, emphasized the strategic vision behind Lulu. “The idea is really how we extend this into new revenue streams and new customer interactions,” Desbaillets stated, projecting that Lulu could boost revenue by 10% to 20%. He also highlighted the operational benefits, noting that the system is designed to “lighten staff workload by handling detailed ingredient and nutrition queries, freeing employees to focus on speed and hospitality.” For customers, Lulu simplifies the often-complex “build-your-own” process and will even support voice-based ordering for hands-free convenience. It can generate balanced recommendations for intricate requests, such as high protein with low calories, without requiring manual browsing or calculation from the user.

Beyond its direct consumer applications, SaladStop! envisions Lulu opening up entirely new business-to-business (B2B) partnerships. Desbaillets foresees fitness centers utilizing the chatbot to create personalized meal plans tailored to clients’ fitness objectives. Similarly, hospitals could develop programs based on patients’ medical needs, such as sugar reduction, cholesterol monitoring, or fiber intake.

Lulu’s rollout will begin in Singapore in November, where it will undergo refinement until December before its broader launch across SaladStop!’s international markets, including the Philippines, Hong Kong, Indonesia, South Korea, and Thailand. Desbaillets stressed the importance of local market testing to customize Lulu’s recommendations, acknowledging varying health priorities across regions—some focusing on calorie counting, others on protein or balanced nutrition. It is important to note that Lulu is intended to complement, not replace, professional advice from doctors, nutritionists, or trainers.
